Go here and look under "Light". You'll see several plug-ins listed that can add lighting effects to images, including The Plugin Site's own LightMachine.

On the Mac I always use Calico. It handles standard horizontal panoramas as well as stacked sets of related images. For Windows you might try PhotoVista. Google can help you find other options.
Photoshop CS3 is supposed to have better stitching tools than CS2; I have not tested it yet.

I would recommend BlackMagic for Windows and Coloriage for Windows/Mac.
Harald's B/W Styler may also be of interest.
Also, prep your image--it needs Levels adjustment and perhaps conversion to grayscale to remove the yellow cast.

The KPT Collection (see visuals here) is an updated set of the popular Kai plug-ins, offered by Corel. It hasn't been updated lately, but did run natively in Mac OS-X and probably Windows XP upon its release.
